Tim’s Shrimp and Grits
Shrimp (depending on how many your family will need)
Grits (follow the directions on the box for the amount needed)
Shredded Cheese (up to 1 cup depending on how much cheese you wish to have)
1 Tablespoon butter
2 Tablespoon Olive Oil
½ Cup Onion (chopped)
½ Cup Red and ½ Cup Yellow peppers (chopped)
2 Garlic (1 minced and 1 chopped)
2 Cup sliced mushrooms
2 Tablespoon Port Wine
¼ Cup scallions
Salt and pepper to taste
Cook grits according to the directions on the box (note: be sure to salt the grits or you will never get enough salt in them after they are cooked).
Once grits are cooked, add cheese, minced garlic and scallions to the grits then stir it all together.
While the above is going on, sauté onions and peppers in melted butter and hot olive oil. Once those have softened a little add chopped garlic, salt and pepper and 2 cups of sliced mushrooms. After a minute or two add the shrimp (deveined and tails removed). Cover and cook for about 3-5 minutes. Then add 2 Tablespoon of Port wine and stir together.
When ready to serve, place your grits in the middle of the plate, make a well and place your shrimp and vegetables in the middle of the grits. Southern cooking makes you gooood looking!!!
