"Southern Cookin' Makes You Goooooooooooood Loooooooooooookin'"!

Tim and Jan’s Juicy Roasted Turkey

12 pound fresh Turkey
2 TBS each fresh rosemary and sage minced
8 TBS or 1 stick of butter at room temperature
1 head of garlic cut in half
1 orange quartered
1 lemon quartered
1 cup good white wine
1 cup chicken stock
Salt and pepper to taste
 
 
Make sure the cavity of the turkey has been cleaned of all scraps and bag of neck, heart, etc.  Make a butter compound with the softened butter and herbs.  With clean hands spread the butter mixture all over the turkey.  Salt and pepper the inside of turkey as well as the outside.  Add garlic, lemon and orange quarters to the inside cavity of the turkey and place in large roasting pan.  Add wine and stock to the bottom of the pan and lightly cover the top of turkey with a tent of foil.  Cook in a 350 degree oven for about 2 ½ - 3 hours removing foil after first hour.  Remove and test the turkey with a meat thermometer that should read 150-160 degrees.  Allow to rest for about 15 minutes.  Slice and enjoy!
