Tim’s Mother’s Collard Greens
Bunch Fresh Collard Greens (removed and cleaned from stem)
(Tip. Once collard greens are cleaned and cut place them in the freezer to give them extra tenderness and sweetness)
Country Ham (cubed)
Pepper (as needed)
Roll collard greens up and chop into slices. In a cold pot add cold water, collard greens all the way to the top, and add cubed pieces of country ham. To this add a little pepper (a couple of turns). Cover and allow cooking for 2-3 hours.
