~PECAN MELTAWAYS~
Serves 4
1 cup unsalted butter, softened (always use real butter)
1/2 cup sugar
1 tablespoon vanilla extract
2 cups unbleached all-purpose flour
3/4 cup ground pecans,
toasted 1 cup confectioners' sugar
1 tablespoon ground nutmeg
Preheat oven to 300°F. Cream the butter, sugar, and vanilla in a large mixing bowl. Gradually add the flour and mix well. Stir in pecans. Shape into l~inch balls and place on an ungreased cookie sheet. Bake until the bottoms are slightly browned. Allow cookies to cool on wire racks. Combine the confectioners' sugar with the ground nutmeg. Once the cookies have cooled, gently roll them in the sugar mixture. These are so good and your family will be proud of you for making them!
